Instructions

  1. In a heavy 6-quart Dutch oven, heat the olive oil over medium heat for 1 minute.
  2. Add chopped onions, minced garlic, and chopped celery; cook uncovered until the onion and celery are soft, about 5 to 8 minutes.
  3. Add chopped tomatoes, sliced yellow squash, lima beans, white wine or chicken broth, and the dried seasonings; simmer uncovered for 10 to 15 minutes.
  4. Add the cooked and drained white beans; stir and simmer for 5 more minutes.
  5. Stir in the lemon juice and serve.
