Ingredients

  • 1 c. cornmeal
  • 1/2 c. flour
  • 1 tsp. salt
  • 1/2 tsp. baking powder
  • 3 Tbsp. shortening or cooking oil
  • boiling water
  • 1 egg

Instructions

  1. Sift together the cornmeal, flour, salt, and baking powder.
  2. Put oil or shortening in a heavy skillet on top of the stove and heat until very hot.
  3. Pour boiling water over the dry mixture until soupy; stir well.
  4. Add the egg and beat well into the mixture.
  5. Pour the hot grease into the batter.
  6. Cook on top of the stove until several air bubbles form in the bread.
  7. Transfer the skillet to a 450°F oven and bake until lightly browned on top.
