Ingredients

  • 8 oz. linguine
  • 1 lb. scallops
  • 2 Tbsp. lemon juice
  • 1 clove garlic
  • 1 Tbsp. fresh parsley
  • 1/2 tsp. dill weed
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/3 cup butter or margarine
  • 1/2 cup heavy cream

Instructions

  1. Cook linguine to desired doneness as directed on the package. Drain and rinse with hot water.
  2. In a large bowl, combine scallops, lemon juice, and minced garlic.
  3. Sprinkle with chopped parsley, dill weed, salt, and pepper; toss gently to coat.
  4. Cover and refrigerate for 10 to 15 minutes to allow flavors to blend.
  5. In a large saucepan, melt the butter over medium heat.
  6. Drain scallops well; sauté for 3 to 4 minutes, coating well with butter.
  7. Add heavy cream and heat thoroughly for about 1 minute.
  8. Add cooked linguine to the scallop mixture over medium-high heat, tossing gently to distribute scallops and heat through.
  9. Sprinkle with Parmesan cheese and serve immediately.
