Ingredients

  • 2 lb. fresh sea scallops
  • 4 Tbsp. butter, melted
  • 1/2 cup dry vermouth or dry wine
  • 1/4 cup lemon juice
  • 1 cup fresh seasoned bread crumbs

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Place scallops in a large ovenproof casserole dish.
  3. Drizzle each portion with 1 tablespoon melted butter, 2 tablespoons dry vermouth, and 1 tablespoon lemon juice.
  4. Top with fresh seasoned bread crumbs.
  5. Bake for 15 to 20 minutes or until scallops are almost firm.
  6. Top with grated cheese and bake 2 minutes longer until cheese is melted and golden brown.
  7. Serve with a side of pasta and a fresh green salad.
