Scallops Nicoise

Ingredients

  • 1 1/2 lb. bay scallops
  • 3 tomatoes
  • 12 pitted green olives
  • 6 pitted black olives
  • 3 Tbsp. capers
  • pepper
  • 2 Tbsp. butter
  • 2 Tbsp. parsley
  • juice of 1/2 lemon
  • 1 Tbsp. minced garlic
  • 1 Tbsp. olive oil

Instructions

  1. Core and peel tomatoes, then cut into 1/2-inch cubes.
  2. Chop the green and black olives, approximately 3 tablespoons of green and 1 1/2 tablespoons of black.
  3. Saute the minced garlic in olive oil until fragrant.
  4. Add the chopped tomatoes and bring to a boil.
  5. Add the chopped olives and capers, then season with salt and pepper.
  6. Cook for 2 minutes before serving.
