Ingredients

  • 1 cup milk
  • 2 eggs
  • 1/2 teaspoon salt
  • 1 1/2 cups flour
  • shortening
  • 2 tablespoons farina
  • 2 tablespoons sugar
  • peaches

Instructions

  1. Mix milk, eggs, salt, and flour into a medium batter.
  2. Put about 1/8-inch of shortening into a 12-inch frying pan.
  3. Heat the pan on high and pour in the batter when hot.
  4. Stir constantly and break up the batter until the liquid is gone.
  5. Lower heat to low and start cutting the batter with a spatula.
  6. Pour in 2 tablespoons of farina a little at a time while cutting with the spatula.
  7. Turn the heat back to medium.
  8. Keep cutting until the mixture breaks into little pieces and doesn't stick to the spatula or feel doughy.
  9. Continue cutting and turning constantly.
  10. Let the mixture brown.
  11. Sprinkle with 1 tablespoon of sugar and mix in.
  12. When done, sprinkle more sugar on top and serve with canned peaches.
