Ingredients

  • 2 eggs
  • salt
  • 2 Tbsp. sugar
  • 1 tsp. vanilla extract
  • 1 tsp. almond extract
  • 1 cup flour
  • 1/2 cup skim milk
  • 1/2 cup no fat yogurt
  • 4 tsp. baking powder
  • bananas

Instructions

  1. Beat the eggs until frothy.
  2. Add salt, sugar, vanilla, and almond extract.
  3. Alternate adding flour, milk, and yogurt until combined.
  4. Incorporate any optional ingredients like fruit or nuts.
  5. Just before cooking, add baking powder and stir briefly until lumps are out.
  6. Cook on a very hot griddle without oil until bubbles form and edges are golden.
  7. Serve hot with fresh fruit, maple syrup, or yogurt.
