Ingredients

  • 2 lb. frozen hash brown potatoes, thawed
  • 2 1/2 cups shredded sharp Cheddar cheese
  • 2 cups sour cream
  • 10 3/4 oz. can cream of chicken or mushroom soup
  • 1/2 cup chopped onions
  • 1/4 cup butter
  • salt to taste
  • pepper to taste

Instructions

  1. Preheat oven to 350°F.
  2. Lightly butter a 7 x 10-inch baking dish.
  3. In a large bowl, combine thawed hash brown potatoes, shredded Cheddar cheese, sour cream, cream of chicken or mushroom soup, chopped onions, salt, and pepper.
  4. Pour the mixture into the prepared baking dish.
  5. In a separate bowl, mix cornflake crumbs with 1/2 cup melted butter.
  6. Sprinkle the cornflake mixture evenly over the potato mixture.
  7. Bake for about 45 minutes, until browned and bubbly.
