Ingredients

  • 2 lb. fish fillets (perch, flounder, haddock, pollock)
  • 1 tsp. salt
  • 1/2 tsp. onion powder
  • 1/2 tsp. pepper
  • 1 (10 oz.) can condensed Cheddar cheese soup
  • 1 (10 oz.) pkg. frozen chopped spinach, thawed and drained
  • 2 c. Bisquick
  • 1/3 c. Parmesan cheese
  • 1 c. milk

Instructions

  1. Preheat oven to 350°F.
  2. Arrange fish fillets in a greased 13 x 9 x 2-inch baking dish. Sprinkle with salt, onion powder, and pepper.
  3. Add 1/3 cup milk to the can of condensed Cheddar cheese soup and stir to thin.
  4. Spoon the cheese mixture over the fish.
  5. Top with thawed and drained chopped spinach.
  6. In a separate bowl, beat the remaining ingredients (Bisquick, Parmesan cheese, milk) about 1 minute or until almost smooth.
  7. Pour the batter over the spinach layer.
  8. Bake uncovered for about 40 minutes or until the top is golden brown.
  9. Remove from oven and let stand for 5 to 10 minutes before serving.
