Seafood Coquilles are a delightful dish featuring tender scallops and succulent shrimp, complemented by the earthy flavor of mushrooms and a creamy shrimp soup base. Ingredients

  • 1 (12 oz.) pkg. scallops
  • 1 (12 oz.) pkg. cooked shrimp
  • 1 (10 oz.) can sliced mushrooms
  • 2 (10 oz. each) cans condensed cream of shrimp soup
  • 1 Tbsp. grated lemon peel

Instructions

  1. Heat oven to 400°.
  2. Mix all ingredients, except cheese.
  3. Place about 1 cup mixture in each of 5 or 6 baking shells.
  4. Place on baking sheet and bake for 15 minutes.
  5. Remove from oven and top shells with cheese.
  6. Bake 2 to 3 minutes longer.
