Ingredients

  • 1 lb. medium shrimp
  • 1 lb. scallops
  • 2 c. quick cooking rice
  • 1 c. cream
  • 1 c. butter, melted
  • 2 tsp. Old Bay seasoning
  • 1/2 c. clam juice
  • 1/2 c. white wine
  • 4 cloves garlic, chopped
  • 3 Tbsp. onion tops
  • 1 c. grated Cheddar cheese

Instructions

  1. Place rice in a 2-quart baking dish.
  2. Add scallops and shrimp to the rice.
  3. Combine cream, melted butter, clam juice, white wine, Old Bay seasoning, and chopped garlic in a bowl.
  4. Pour the mixture over the rice and seafood in the baking dish.
  5. Sprinkle with chopped onion tops and grated Cheddar cheese on top.
  6. Bake at 350°F for 25 minutes until bubbly and golden.
