Ingredients

  • 8 oz. neufchatel cheese, softened
  • 3/4 cup crumbled blue cheese
  • 1/4 cup mayonnaise
  • 1/4 cup milk
  • 2 Tbsp. lemon juice
  • 1 Tbsp. chopped chives
  • 2 quarts torn assorted greens
  • 1 cup shredded carrots
  • 2 1/2 cups ham cubes
  • 1 cup chopped green pepper

Instructions

  1. Combine neufchatel cheese and blue cheese, mixing until well blended.
  2. Add mayonnaise, milk, lemon juice, and chives; mix well.
  3. Combine torn greens and shredded carrots.
  4. Combine ham cubes and chopped green pepper.
  5. In a 3-quart bowl, layer the greens mixture, then the ham and green pepper mixture.
  6. Spread the cheese mixture over the top to seal the layers.
  7. Cover and chill several hours before serving.
