- In a bowl, beat eggs and sugar until light.
- Add ricotta cheese and blend well.
- Stir together flour, baking powder, salt, and cinnamon.
- Add dry ingredients to egg mixture; alternate with milk.
- Blend well until smooth.
- Drop by tablespoon into deep, hot oil.
- Fry for 2 to 3 minutes, until golden.
- Turn once during frying.
- Drain on paper towels and let cool.
- Dust with powdered sugar before serving.
