Shanghai Ham features tender pork simmered in soy sauce, ginger, and star anise, offering rich flavors perfect for family dinners or special occasions with an Asian twist.

Ingredients

  • 4 lb. fresh pork ham, butt or shoulder
  • 1 cup soy sauce
  • 1/2 cup sugar
  • 1 tablespoon dry sherry
  • 2 slices ginger root or 2 cloves garlic
  • 3 to 4 cloves star anise
  • 1/2 to 1 cup water

Instructions

  1. Sear and scald the pork by soaking it in boiling water to cover for a few minutes.
  2. When the water returns to a boil, drain and rinse with cold water.
  3. Place the pork with all ingredients in a large saucepan or Dutch oven.
  4. Bring to a boil, cover, and simmer until tender, about 2 hours, turning the pork occasionally.
  5. Remove the cover and increase the heat.
  6. Baste the pork until about 1 cup of liquid remains, about 15 to 20 minutes.
  7. Skim the fat and serve.
