Ingredients

  • 1 pound sharp Cheddar cheese
  • 1/2 stick unsalted butter
  • 1/4 cup sour cream
  • 1/8 tsp. Cayenne
  • 1/4 tsp. mace
  • 2 Tbsp. cooking wine
  • 1 cup chopped walnuts

Instructions

  1. Combine cheese, butter, sour cream, cayenne, mace, and cooking wine in the container of a food processor, and whirl until mixture is smooth and creamy.
  2. Scrape the mixture into a bowl. Stir in the chopped walnuts.
  3. Taste and correct seasoning if needed.
  4. Pack the spread into two 1 1/2 to 2 cup glazed crocks or onion soup bowls. Cover tightly and refrigerate for two days or more before serving.
  5. To serve, let the spread soften slightly at room temperature.
