Ingredients

  • 12 to 14 ladyfingers
  • 3 egg yolks
  • 1/2 cup sugar
  • 1 cup heavy cream
  • 3 egg whites
  • 1 tablespoon gelatin
  • 1/4 cup cold water
  • 1/4 cup hot water
  • 1 teaspoon vanilla or 4 tablespoons sherry or rum

Instructions

  1. Line a medium-sized spring-form pan with ladyfinger halves.
  2. Combine egg yolks and sugar in a bowl and mix well.
  3. Beat the heavy cream until stiff peaks form.
  4. Beat egg whites until stiff peaks form.
  5. Soak gelatin in cold water; then dissolve it in hot water.
  6. Add the dissolved gelatin to the egg yolk mixture and mix thoroughly.
  7. Fold in the whipped cream and beaten egg whites gently.
  8. Add vanilla or sherry or rum to the mixture.
  9. Pour the mixture into the ladyfinger-lined pan.
  10. Chill until the cake is firm before serving.
