Ingredients

  • 1 egg
  • 1/3 cup milk
  • 1/4 teaspoon cinnamon
  • 1 (13.5 oz.) box Betty Crocker wild blueberry muffin mix
  • 1 1/2 medium ripe bananas, mashed
  • 1/2 cup pecan pieces

Instructions

  1. Preheat oven to 400°F.
  2. Drain and rinse blueberries; set aside.
  3. In a bowl, blend egg, milk, and cinnamon.
  4. Stir in muffin mix just until moistened; batter will be lumpy.
  5. Fold in blueberries, mashed bananas, and pecan pieces.
  6. Pour batter into one large loaf pan or two mini pans.
  7. Top with pecan halves.
  8. Bake for 35 to 45 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool for 15 minutes.
  10. Remove from pan(s) and cool completely.
