Ingredients

  • 1 medium potato, sliced
  • 2 medium onions, sliced
  • 1 lb. ground turkey
  • 1/2 cup diced celery
  • 1/2 cup uncooked rice
  • 1 (No. 2) can red kidney beans
  • 1 can undiluted tomato soup
  • 1/2 cup water

Instructions

  1. In a 10-inch baking dish, layer the sliced potatoes on the bottom.
  2. Add a layer of sliced onions over the potatoes.
  3. Spread the ground turkey evenly over the onions.
  4. Sprinkle the uncooked rice over the turkey.
  5. Distribute the diced celery and kidney beans on top.
  6. Spread the undiluted tomato soup over all the ingredients.
  7. Pour water evenly over the layered ingredients and cover tightly.
  8. Bake at 350°F (175°C) for 1 hour until cooked through.
