Ingredients

  • 1 (No. 303) can whole or sliced beets, drained
  • 1/2 cup reserved beet juice
  • 3/4 cup vinegar
  • 1/4 cup sugar
  • 1 teaspoon salt
  • 4 whole cloves
  • 1 small bay leaf (optional)
  • 1 medium onion, thinly sliced (optional)

Instructions

  1. In a saucepan, combine beet juice, vinegar, sugar, salt, cloves, bay leaf (if using), and onion (if using).
  2. Simmer for 5 minutes.
  3. Place the hot beet liquid and drained beets into a container with a cover.
  4. Cool the mixture, then refrigerate for 24 to 36 hours.
  5. Remove cloves before serving.
