Ingredients

  • 2 lb. flank or round steak, cut into strips 1/2 x 1 1/2-inches
  • 1 crushed garlic clove
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1/4 tsp. ginger
  • 1/4 tsp. sugar
  • 1/4 cup soy sauce
  • 1/2 cup water
  • 2 green peppers, cut in large chunks
  • 1 can bean sprouts, drained
  • 1 medium onion, sliced
  • 4 medium tomatoes, quartered

Instructions

  1. Brown the steak strips on all sides in a skillet.
  2. Add crushed garlic, salt, pepper, ginger, and sugar; stir well.
  3. Cover and cook over low heat for 20 minutes.
  4. Remove the meat from the skillet and set aside.
  5. Add soy sauce, green peppers, bean sprouts, and sliced onion to the skillet.
  6. Cook covered for 5 minutes.
  7. Push food to the edges of the skillet; add quartered tomatoes and cook covered for 5 minutes.
  8. Make a smooth paste of cornstarch and water.
  9. Add the cornstarch mixture to the hot skillet and stir gently until thickened.
  10. Return the cooked meat to the skillet, stir to combine, and serve hot with rice.
