A hearty and flavorful shrimp cornbread casserole combining tender shrimp, savory vegetables, and crumbled cornbread, perfect for comforting family dinners or casual gatherings.

Ingredients

  • 1 1/2 lb. shrimp
  • 7 cups cooked cornbread, crumbled
  • 1 stick oleo
  • 1 onion
  • 3 to 4 stalks celery
  • 1 bunch green onions
  • 1 can cream of mushroom soup

Instructions

  1. Melt oleo and sauté chopped onion, celery, and green onions until tender.
  2. Add shrimp and cook until pink and opaque.
  3. In a large casserole dish, combine crumbled cornbread, sautéed vegetables and shrimp, cream of mushroom soup, and half a can of water.
  4. Stir all ingredients together thoroughly.
  5. Bake in a preheated oven at 350°F (175°C) for 30 minutes, covered.
  6. Uncover and bake for an additional 5 minutes until top is slightly browned.
