Stuffed Crawfish Beignets

Ingredients
- 1/2 cup chopped onions ⓘ
- 1/2 cup chopped celery ⓘ
- 1/3 cup butter ⓘ
- 2 cloves garlic, minced ⓘ
- salt to taste
- pepper to taste ⓘ
- 1 pound crawfish tails, cooked ⓘ
- 1/4 cup grated Cheddar cheese ⓘ
- 1/4 cup grated Swiss cheese ⓘ
- 1 1/2 tablespoons chopped green onions ⓘ
- 1 1/2 tablespoons chopped parsley ⓘ
- 2 cans refrigerated biscuits ⓘ
Instructions
- Saute chopped onions and chopped celery in butter until tender.
- Add minced garlic, salt, and pepper; cook briefly.
- Add cooked crawfish tails and simmer 8 to 10 minutes or until all liquid has evaporated.
- Set mixture aside and cool completely.
- Stir in grated Cheddar cheese, grated Swiss cheese, chopped green onions, and chopped parsley.
- Prepare the refrigerated biscuits according to package instructions.
- Wrap the crawfish and cheese mixture inside each biscuit and seal.
- Deep fry the stuffed biscuits in vegetable oil until golden brown and crispy.
- Drain on paper towels and serve hot.
