Ingredients

  • 1/2 cup chopped onions
  • 1/2 cup chopped celery
  • 1/3 cup butter
  • 2 cloves garlic, minced
  • salt to taste
  • pepper to taste
  • 1 pound crawfish tails, cooked
  • 1/4 cup grated Cheddar cheese
  • 1/4 cup grated Swiss cheese
  • 1 1/2 tablespoons chopped green onions
  • 1 1/2 tablespoons chopped parsley
  • 2 cans refrigerated biscuits

Instructions

  1. Saute chopped onions and chopped celery in butter until tender.
  2. Add minced garlic, salt, and pepper; cook briefly.
  3. Add cooked crawfish tails and simmer 8 to 10 minutes or until all liquid has evaporated.
  4. Set mixture aside and cool completely.
  5. Stir in grated Cheddar cheese, grated Swiss cheese, chopped green onions, and chopped parsley.
  6. Prepare the refrigerated biscuits according to package instructions.
  7. Wrap the crawfish and cheese mixture inside each biscuit and seal.
  8. Deep fry the stuffed biscuits in vegetable oil until golden brown and crispy.
  9. Drain on paper towels and serve hot.
