Ingredients

  • 1 lb. fresh or frozen shelled shrimp
  • 1 (9 oz.) pkg. frozen artichoke hearts
  • 5 tsp. cornstarch
  • 1/2 tsp. paprika
  • 1 2/3 c. milk
  • 1/4 c. dry white wine
  • 3/4 c. shredded Swiss cheese
  • 2 1/4 c. cooked rice
  • 1/8 tsp. dried oregano, crushed
  • paprika
  • 3 Tbsp. fine dry bread crumbs

Instructions

  1. Thaw the shrimp if frozen.
  2. Cook the artichoke hearts according to package directions; drain and set aside.
  3. In a medium saucepan, combine cornstarch, paprika, salt, and dash of pepper for the cheese sauce.
  4. Add milk all at once and cook, stirring constantly, until thickened and bubbly.
  5. Stir in the white wine and heat through.
  6. Add the shredded Swiss cheese and stir until melted into the sauce.
  7. Serve the cheese sauce over cooked rice and top with cooked shrimp and artichokes.
  8. Optional: sprinkle with dry bread crumbs and paprika before serving.
