sig's Garlicky Sweetcorn

Ingredients

  • 8 halved fresh, ripe sweetcorn. or 4 whole cobs
  • 3/4 cup of melted butter
  • 1 1/2 tbsp olive oil
  • 2 large cloves garlic,crushed
  • 100 grams of homemade white or wholemeal breadcrumbs
  • 1/2 tbsp dried parsley
  • 1/2 tbsp dried coriander
  • 1 pinch each salt and cayenne pepper (though I do vary the herbs other than garlic occasionally ,just for something different)

Instructions

  1. pull husks and silks off the cobs, boil the corn in salted water until tender.
  2. Drain and cool.
  3. melt the butter in a saucepan add the garlic, olive oil,salt and pepper.
  4. Pour into a shallow dish, put the breadcrumbs and herbs into another dish .
  5. roll the cooled corn first in the melted garlic butter until well soaked, then roll in breadcrumbs until well coated.
  6. cook in hot griddle pan, pan or on BBQ for ten minutes turning so you achieve a slightly charred golden crust.
