- In a small bowl, sprinkle gelatin over cold water; allow to stand 2 minutes to soften.
- In a medium saucepan, stir together sugar and cocoa.
- Stir in skim milk.
- Cook over medium heat, stirring constantly until mixture is very hot.
- Add gelatin mixture, stirring until gelatin is dissolved.
- Pour mixture into a medium bowl and refrigerate until chilled but not gelling.
- In a blender or food processor, beat Ricotta cheese and vanilla until smooth.
- Stir the Ricotta mixture into the thawed whipped topping.
- Gradually fold the Ricotta mixture into the cocoa mixture.
- Pour into a 2-cup mold and chill until set.
- Unmold and serve with strawberries.
