Ingredients

  • 3 egg whites
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1 cup chopped pecans
  • 12 crushed saltines
  • 1 teaspoon vanilla

Instructions

  1. Beat the egg whites until stiff.
  2. Add sugar and baking powder to the egg whites and mix well.
  3. Add 1 cup chopped pecans, crushed saltines, and vanilla to the mixture.
  4. Pour the batter into a greased 9-inch pie plate.
  5. Bake at 325°F (163°C) for 30 minutes or until golden brown.
  6. Whip 1/2 pint of cream until soft peaks form.
  7. Add 3/4 cup drained crushed pineapple to the whipped cream and mix.
  8. Pour the pineapple cream topping over the cooled pie.
