Ingredients

  • 4 English muffins
  • 3 eggs
  • 8 green onions
  • 3 Tbsp. minced green chilies or 2 whole jalapenos
  • 2 Tbsp. butter

Instructions

  1. Beat the eggs with a fork in a small deep bowl.
  2. Add minced green onions and green chilies or jalapenos to the eggs.
  3. Heat butter in a frying pan over medium-high heat until bubbling.
  4. Pour in the egg mixture and stir gently until cooked.
  5. Spoon the cooked egg mixture onto the bottom muffin halves.
  6. Top with the remaining muffin halves and serve immediately.
