Ingredients

  • 1 box frozen chopped broccoli
  • 1 box Jiffy cornmeal mix
  • 8 oz Cheddar cheese, grated
  • 4 eggs
  • 1/2 cup green onions, chopped
  • 1 stick butter, melted

Instructions

  1. Preheat oven to 400°F (200°C). Grease and flour an iron skillet with 1 tablespoon of meal.
  2. In a mixing bowl, combine the frozen chopped broccoli, Jiffy cornmeal mix, grated Cheddar cheese, eggs, chopped green onions, and melted butter.
  3. Mix until well combined.
  4. Pour the mixture into the prepared skillet, spreading evenly.
  5. Bake in the preheated oven for 30 to 40 minutes, or until golden brown and cooked through.
