Ingredients

  • 1 lb beef tenderloin steak, thinly sliced
  • 1/4 tsp baking soda
  • 4 tbsp oil
  • 3 None onions, cut into wedges
  • 1/4 cup Worcestershire sauce
  • 1/2 cup tomato sauce
  • 1/2 cup granulated sugar
  • 1 tbsp white wine

Instructions

  1. Flatten each piece of beef with meat mallet; place in a bowl. Combine baking soda with 1/4 cup water. Pour over steak; let stand for 1 hour. Drain well.
  2. Preheat the oven to 450°F. Place cast iron steak plate or ovenproof skillet in oven for 10 mins, or until plate is very hot. Meanwhile, heat 1 tbsp oil in large skillet on high heat. Cook steak, tossing to evaporate water; drain. Pour off oil from pan. Heat 2 tbsp oil in pan. Return steak to pan; cook until well browned on high heat. Remove from pan.
  3. Heat remaining oil in pan. Add onions; saute quickly until golden brown and still crisp. Remove from pan; keep warm.
  4. Return steak to pan; toss for 1 min. Add combined Worcestershire and tomato sauces, then sugar. Stir until sauce boils. Reduce heat to low; simmer for 2 mins.
  5. Remove steak plate from oven; place on wooden base. Arrange onions on steak plate. Spoon meat and sauce over onions. Pour wine over the steak plate immediately.
