Ingredients

  • 2 onions
  • 4 to 6 carrots, diced
  • 1 1/2 lb. stewing beef, trimmed
  • 4 to 6 potatoes, not too finely chopped
  • 1 lb. mushrooms
  • 1 can tomato paste
  • salt and pepper
  • rosemary and basil
  • 1 1/2 cups beef stock
  • 3 cups red wine

Instructions

  1. Put all ingredients into a large casserole dish, including onions, carrots, stewing beef, potatoes, mushrooms, tomato paste, salt, pepper, rosemary, basil, beef stock, and red wine.
  2. Bake in a preheated oven at 300°F (150°C) for 3 hours and 15 minutes.
  3. During the last 15 minutes of baking, add the frozen peas and parsley to the stew and continue baking.
