Ingredients

  • 1 1/2 lb beef stew meat
  • 1 medium onion
  • 1 stalk celery
  • 6 carrots
  • 6 potatoes
  • 2 tsp salt
  • 1 Tbsp sugar
  • 3 Tbsp tapioca
  • 1 cup tomato juice
  • 1 cup water

Instructions

  1. Put the beef and vegetables (onion, celery, carrots, potatoes) in a casserole.
  2. Do not brown the meat.
  3. Blend 2 teaspoons salt, 1 tablespoon sugar, and 3 tablespoons Minute tapioca.
  4. Sprinkle the mixture over the meat and vegetables.
  5. Add 1 cup of tomato juice.
  6. Cover the casserole.
  7. Bake for 4 hours at 250°F (120°C).
  8. Add 1 cup of water after baking.
  9. Use more tapioca to thicken if necessary.
  10. Do not peek during baking.
