Slow Cooked Meat Loaf

Ingredients

  • 1 egg
  • 2 slices day-old bread, cubed
  • 2 Tbsp. finely chopped green pepper
  • 1/4 tsp. pepper
  • 1/4 c. ketchup
  • 8 medium carrots, cut into 1-inch chunks
  • 1/4 c. milk
  • 1/4 c. finely chopped onion
  • 1 tsp. salt
  • 1 1/2 lb. lean ground beef
  • 8 small red potatoes

Instructions

  1. In a bowl, beat egg and milk. Stir in the bread cubes, onion, green pepper, salt and pepper. Add the beef and mix well.
  2. Shape into a round loaf. Place in a 5-quart slow cooker. Spread ketchup on top of loaf.
