Ingredients

  • 1 qt. coarsely chopped spinach
  • 1/2 c. chopped celery
  • 6 Tbsp. finely chopped onion
  • 3/4 c. Old English cheese, cut into 1/4-inch pieces
  • 3 hard-cooked eggs, grated
  • 3 hard-cooked eggs, chopped
  • 1/2 tsp. salt
  • 1/2 tsp. Tabasco
  • 1 1/2 tsp. vinegar

Instructions

  1. Wash the spinach several times until clean and set aside to drain.
  2. Combine chopped celery, finely chopped onion, grated eggs, and cheese pieces in a bowl.
  3. Mix the vegetables and cheese with the drained spinach until evenly combined.
  4. Gently fold mayonnaise into the vegetable mixture until well coated.
  5. Add salt, Tabasco, and vinegar to taste and mix well.
  6. Garnish the salad with grated hard-cooked eggs before serving.
  7. Serve with horseradish on the side if desired.
