Ingredients

  • 1 Tbsp. cooking oil
  • 2 medium onions, chopped fine
  • 1 (8 oz.) can tomato sauce
  • 4 cups fresh corn or 3 cans whole kernel corn
  • 3/4 tsp. sugar
  • 1/4 tsp. cayenne pepper
  • 1 tsp. salt

Instructions

  1. Saute chopped onions in cooking oil until brown, about 10 minutes.
  2. Add 1/4 cup water and cook for 5 minutes.
  3. Stir in tomato sauce and simmer for 20 minutes.
  4. Add 1/2 cup water and cook for an additional 10 minutes.
  5. Add corn, water, sugar, and salt to the mixture.
  6. Cook for about 40 minutes, then add cayenne pepper to taste.
