Ingredients

  • lemon juice
  • coconut
  • boiling water
  • cream
  • lime jello
  • salt

Instructions

  1. Dissolve the lime jello in boiling water.
  2. Add salt and lemon juice; chill until slightly thickened.
  3. Place in a bowl of ice and water and beat with a rotary eggbeater until fluffy and thick.
  4. Fold in one-third of the whipped cream and half a cup of coconut.
  5. Pour into a graham cracker crust.
  6. Spread the remaining whipped cream over the top.
  7. Sprinkle the remaining coconut on top.
  8. Keep refrigerated until served.
