Ingredients

  • 3 egg whites
  • 1 cup granulated sugar
  • 12 finely crumbled soda crackers
  • 1 teaspoon vanilla
  • 1 teaspoon baking powder
  • 1 teaspoon white vinegar
  • 1/2 cup chopped nuts

Instructions

  1. Beat egg whites until stiff.
  2. Add granulated sugar, vanilla, baking powder, vinegar, chopped nuts, and crumbled soda crackers to the beaten egg whites and mix well.
  3. Pour the mixture into a buttered 9-inch pie tin.
  4. Bake at 350°F (175°C) for 35 to 40 minutes.
  5. Allow to cool, then cover the top with apricot jam.
  6. Serve with whipped cream or soft ice cream.
