  • 1 clove garlic
  • 1 tsp. sugar
  • 2 c. canned, drained tomatoes
  • 1 large can evaporated milk
  • 1/2 lb. Velveeta cheese, grated or cubed
  • corn tortillas

Instructions

  1. Saute chopped green chilies in fat.
  2. Add chopped onions, minced garlic, sugar, and drained tomatoes. Simmer for about 1 hour.
  3. Just before serving, add evaporated milk and grated or cubed Velveeta cheese.
  4. Heat until the cheese is melted and the sauce is smooth.
  5. Dip corn tortillas in the sauce, roll up, and place in a baking dish.
  6. Pour remaining sauce over the rolled tortillas and serve.

Tips & Substitutions

For a spicier kick, consider adding jalapeños or using hot green chilies. If you'd like a creamier texture, substitute half of the evaporated milk with sour cream or Greek yogurt. Corn tortillas can be replaced with flour tortillas for a different flavor. Also, if you don't have Velveeta, any meltable cheese can work, though the taste will vary. This dish can also be made ahead and reheated.

Serving Suggestions

Serve these soft cheese tacos with a side of guacamole or a fresh salad for a complete meal. They pair beautifully with Baked Chili Rellanos for a festive dinner. Consider topping the tacos with fresh cilantro, diced tomatoes, or a sprinkle of lime juice for added flavor. A side of Mexican rice complements this dish well.

Storage & Reheating

Store leftover soft cheese tacos in an airtight container in the refrigerator for up to 3 days. When reheating, place them in a microwave-safe dish and cover with a damp paper towel to keep the tortillas moist. You can also reheat them in the oven at 350°F for about 15-20 minutes until heated through.
