A flavorful Mexican-inspired biscuit bake featuring salsa, Monterey Jack cheese, and vegetables, perfect for a hearty breakfast or casual dinner for family and friends.

Ingredients

  • 2 Tbsp. margarine
  • 4 cans refrigerated biscuits
  • 16 oz. jar salsa
  • 12 oz. shredded Monterey Jack cheese
  • 1/2 c. green pepper
  • 1/2 c. onion
  • 1/3 c. chopped black olives

Instructions

  1. In a 13 x 9-inch pan, melt margarine and coat the bottom and sides of the pan.
  2. Chop the refrigerated biscuits into fourths and place them into the pan.
  3. Pour salsa over the biscuits and toss to combine.
  4. Sprinkle shredded Monterey Jack cheese, green pepper, onion, and black olives over the mixture.
  5. Bake at 375°F (190°C) for 35 to 40 minutes.
  6. Let stand for 15 minutes before serving.
  7. Serve warm.
