Ingredients

  • 1 lb. ground beef
  • 1 lb. ground pork sausage or ground turkey
  • 1 medium onion, chopped
  • salt and pepper to taste
  • 1 (10 oz.) can diced tomatoes with green chilies
  • 1/2 tsp. chili powder
  • 1/4 tsp. cumin
  • 1/2 tsp. oregano
  • 12 medium flour tortillas
  • 1 (10 3/4 oz.) can cream of chicken soup
  • 8 oz. Velveeta cheese

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Brown ground beef, ground pork sausage or ground turkey, and chopped onion in a large skillet. Season with salt and pepper to taste.
  3. Drain excess fat from the skillet.
  4. Add diced tomatoes with green chilies, chili powder, cumin, and oregano to the meat mixture. Cover and simmer for 5 minutes.
  5. Place 3 to 4 tablespoons of meat mixture in the center of each flour tortilla.
  6. Fold the tortilla to make a roll and fold the ends down.
  7. Place seam side down in a large ungreased baking pan.
  8. Sprinkle remaining meat mixture over the rolled enchiladas.
  9. In a medium saucepan, combine cream of chicken soup and Velveeta cheese. Heat until cheese melts, stirring constantly.
  10. Pour the cheese sauce over the enchiladas.
  11. Bake for 10 to 15 minutes until bubbly and heated through.
