Soft Enchiladas
Soft, cheesy enchiladas filled with flavorful seasoned meats and topped with creamy sauce, perfect for comforting family dinners or casual gatherings.
Ingredients
- 1 lb. ground beef ⓘ
- 1 lb. ground pork sausage or ground turkey ⓘ
- 1 medium onion, chopped ⓘ
- salt and pepper to taste ⓘ
- 1 (10 oz.) can diced tomatoes with green chilies ⓘ
- 1/2 tsp. chili powder ⓘ
- 1/4 tsp. cumin ⓘ
- 1/2 tsp. oregano ⓘ
- 12 medium flour tortillas ⓘ
- 1 (10 3/4 oz.) can cream of chicken soup ⓘ
- 8 oz. Velveeta cheese ⓘ
Instructions
- Preheat oven to 350°F (175°C).
- Brown ground beef, ground pork sausage or ground turkey, and chopped onion in a large skillet. Season with salt and pepper to taste.
- Drain excess fat from the skillet.
- Add diced tomatoes with green chilies, chili powder, cumin, and oregano to the meat mixture. Cover and simmer for 5 minutes.
- Place 3 to 4 tablespoons of meat mixture in the center of each flour tortilla.
- Fold the tortilla to make a roll and fold the ends down.
- Place seam side down in a large ungreased baking pan.
- Sprinkle remaining meat mixture over the rolled enchiladas.
- In a medium saucepan, combine cream of chicken soup and Velveeta cheese. Heat until cheese melts, stirring constantly.
- Pour the cheese sauce over the enchiladas.
- Bake for 10 to 15 minutes until bubbly and heated through.
