Ingredients

  • 4 fresh sole fillets
  • 4 Tbsp. butter
  • 4 Tbsp. frozen orange concentrate
  • 4 green onions

Instructions

  1. Preheat oven to 450°F.
  2. Lay four 10-inch long pieces of foil, shiny-side up, on the counter.
  3. Place one sole fillet in the center of each piece of foil.
  4. Top each fillet with 1 teaspoon of butter, 1 tablespoon of orange concentrate, and chopped green onions.
  5. Wrap and seal each foil packet.
  6. Place the foil packets on a baking sheet.
  7. Bake for 15 minutes.
  8. Serve the sole with the extra orange juice sauce, alongside rice and mandarin orange salad.
