Ingredients

  • 5 oz. corkscrew macaroni
  • 10 oz. frozen peas and carrots
  • 1 cup salted peanuts
  • 1 cup cubed Cheddar cheese
  • 2 hard-cooked eggs
  • 2 Tbsp. minced onion
  • 1 cup mayonnaise
  • 1 Tbsp. prepared mustard
  • 3 Tbsp. sweet pickle relish
  • 1/2 tsp. salt
  • dash of cayenne pepper

Instructions

  1. Cook the macaroni, peas, and carrots according to package directions. Drain and chill in cold water.
  2. Place the cooked macaroni and vegetables in a bowl and toss with peanuts, cubed Cheddar cheese, chopped eggs, and minced onion.
  3. In a small bowl, combine mayonnaise, mustard, relish, salt, and cayenne pepper. Stir until well blended.
  4. Pour the dressing over the macaroni mixture and toss to coat evenly.
  5. Chill until ready to serve.
