Ingredients

  • 18 vanilla wafer cookies
  • 3/4 cup white sugar
  • 1 teaspoon vanilla
  • 2 eggs
  • 2 (8 oz) packages cream cheese

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Place cupcake baking papers in muffin tins.
  3. Add 1 vanilla wafer, flat side down, to each paper.
  4. In a mixing bowl, combine white sugar, vanilla, eggs, and cream cheese until smooth.
  5. Spoon the cheesecake mixture into the cupcake papers over the wafers.
  6. Bake in the preheated oven for about 20 minutes or until set.
  7. Allow to cool before serving.
