Ingredients

  • 2 to 4 lb. cooked chicken, shredded
  • 1 can cream of mushroom soup
  • 15 oz. can chili with beans
  • 7 oz. salsa
  • 1/2 cup milk
  • 1/4 cup chopped onion
  • 1 package corn tortillas
  • 1/2 lb. sharp Cheddar cheese
  • 1/2 lb. Jack cheese

Instructions

  1. Grate the Cheddar and Jack cheeses; set aside.
  2. Tear the corn tortillas into pieces; set aside.
  3. Layer half of the tortillas in a 9 x 13-inch casserole dish.
  4. Top with half of the shredded cooked chicken.
  5. Pour half of the cream of mushroom soup, chili with beans, and salsa over the chicken.
  6. Sprinkle half of the cheese over the layers.
  7. Repeat the layers with remaining tortillas, chicken, sauce, and cheese.
  8. Bake uncovered at 350°F for 45 minutes.
