  • 2 medium yellow crookneck summer squash, cut into 1/4-inch thick slices
  • 1 (10 oz.) package frozen baby lima beans, thawed and drained

Instructions

  1. Blanch broccoli florets in large pot of boiling salted water until just crisp-tender, about 2 minutes.
  2. Drain and immediately place in a bowl of ice water.
  3. Drain and pat dry when cold.
  4. Melt butter in a heavy large skillet over medium heat.
  5. Add carrots; cover and cook until crisp-tender, stirring occasionally, about 15 minutes.
  6. Increase heat to medium-high.
  7. Add peppers; stir for 5 minutes.
  8. Add squash; stir for 1 minute.
  9. Add lima beans, broccoli, salt and pepper; cover and cook until heated through, about 4 minutes.
  10. Serve immediately.
