Sotangjon
A hearty Filipino chicken soup filled with savory flavors from mushrooms, vegetables, and sotangjon, perfect for comfort and family gatherings. Rich, flavorful, and nourishing.
Ingredients
- 1/4 cup cooking oil
- 1/2 head garlic, crushed ⓘ
- 1 onion, sliced ⓘ
- 1 stewing chicken, quartered ⓘ
- 10 cups water ⓘ
- 1 carrot ⓘ
- 2 stalks leeks
- 2 stalks celery
- 1 teaspoon salt ⓘ
- 1 teaspoon ajinomoto
- 2 tablespoons patis
- 10 pieces dried mushrooms, soaked in water and sliced ⓘ
- 200 grams sotangjon, soaked in water for 10 minutes ⓘ
Instructions
- Saute the garlic and onion in hot oil.
- Add the pieces of chicken and cook for 5 minutes.
- Pour water and add the vegetables. Let boil.
- When chicken is tender, remove from broth and flake the meat.
- Strain the broth.
- Press the vegetables through a sieve to extract flavor.
- Season with salt, ajinomoto, and patis.
- Pour back the chicken meat into the broth, add taingang daga, mushrooms, and sotangjon.
- Boil for 10 minutes.
- Serve hot with Biscocho.
