Ingredients

  • 2 lb carrots
  • 1/2 stick melted butter
  • 1/2 cup sugar
  • 1 beaten egg
  • 1/4 cup evaporated milk
  • 1 1/2 teaspoon baking powder
  • 1/3 cup sifted flour
  • 1/4 teaspoon cinnamon

Instructions

  1. Peel and prepare the carrots by boiling or steaming until tender, then mash or puree them smoothly.
  2. Preheat the oven to 375°F (190°C).
  3. In a large mixing bowl, combine the mashed carrots with melted butter, sugar, beaten egg, evaporated milk, baking powder, sifted flour, and cinnamon.
  4. Mix thoroughly until the batter is smooth and well combined.
  5. Pour the mixture into a greased baking dish or ramekins.
  6. Bake in the preheated oven for about 15 minutes, or until the souffle is puffed and lightly golden on top.
  7. Serve warm as a side dish or dessert.
