A hearty, tangy beef stew infused with vinegar and pickling spices, perfect for comforting dinners and pairs well with potato dumplings for a satisfying meal.

Ingredients

  • 3 1/2 lb boneless chuck roast
  • 1 1/2 pt white vinegar
  • 1 1/2 pt water
  • 2 Tbsp pickling spices
  • 1 large onion
  • salt to taste

Instructions

  1. Pour the vinegar, water, pickling spices, and onion over the meat; bring to a boil, then cook slowly until the meat is tender.
  2. Use a heavy pot. Add 1 cup of sugar gradually, tasting as you add to balance the flavors.
  3. Soak gingersnaps, a little at a time, in water until they melt and form a thick sauce.
  4. Add the melted gingersnap mixture to the meat.
  5. Make the sauce as thick as desired, then simmer for about an hour, stirring occasionally.
  6. Remove the pickling spices before serving.
  7. Serve over potato dumplings.
