Ingredients

  • 24 oz sour cream
  • 1 lb Velveeta loaf
  • 1 can Ro-Tel
  • 1 lb ground beef
  • 1/4 cup chopped onion
  • 1/2 cup chopped bell pepper
  • 1 bag Doritos or other corn chips
  • Cheddar cheese

Instructions

  1. Spray a 9 x 13-inch glass baking dish with cooking spray and break chips to cover the bottom of the dish.
  2. Brown the ground beef in a skillet and drain excess fat.
  3. Add chopped onion and bell pepper to the beef and sauté until tender.
  4. Pour the beef mixture over the chips in the baking dish.
  5. Combine melted Velveeta, Ro-Tel, and sour cream in a bowl, then pour over the beef mixture.
  6. Top with shredded Cheddar cheese.
  7. Bake at 350°F until bubbly and hot, about 30 minutes.
