Corn Chip Casserole

Ingredients

  • 2 lb. ground beef
  • 1 Tbsp. vegetable oil
  • 1/4 c. chopped onion
  • 1/2 tsp. garlic powder
  • 1 pkg. taco seasoning
  • 1 tsp. salt
  • 1 can tomato sauce
  • 1 small can tomato paste
  • 1 (4 oz.) can diced green chilies
  • 1 small can chopped black olives
  • 1 pkg. corn chips
  • 1/2 lb. shredded Mozzarella cheese
  • 2 c. sour cream

Instructions

  1. Brown ground beef in vegetable oil.
  2. Add chopped onion, garlic powder, taco seasoning, salt, tomato sauce, and tomato paste. Simmer about 10 minutes.
  3. Add diced green chilies and chopped black olives.
  4. Layer half of the meat mixture in a greased 9 x 12-inch pan, followed by half the corn chips.
  5. Spread half of the shredded mozzarella cheese over the chips.
  6. Add the remaining meat mixture on top.
  7. Spread 2 cups of sour cream evenly over the meat layer.
  8. Cover with the remaining corn chips.
  9. Bake at 350°F (175°C) for 30 minutes.
  10. Serve hot, optionally with salsa.
