A vibrant South Pacific-inspired dish featuring tender fried chicken baked with sweet citrus and pineapple, complemented by snow peas and served over fluffy white rice, perfect for a flavorful family meal.

Ingredients

  • 1 fryer, cut into 6 pieces
  • 1/2 cup flour
  • 4 tablespoons margarine
  • 1 (11 oz.) can mandarin oranges with liquid
  • 1 (8 oz.) can pineapple tidbits
  • 1 (10 oz.) package frozen snow peas, thawed
  • pepper
  • 2 1/2 cups cooked white rice

Instructions

  1. Melt margarine in a large frypan.
  2. Dredge chicken pieces in flour and sauté until golden brown on all sides.
  3. Remove chicken from pan and place in a casserole dish.
  4. Pour the juice from the mandarin oranges over the chicken and add pineapple tidbits.
  5. Cover and bake at 350°F (175°C) for 40 minutes.
  6. Add thawed snow peas and cover again.
  7. Bake for an additional 10 minutes.
  8. Remove cover, fold in the mandarin oranges and pepper.
  9. Cook for another 10 minutes.
  10. Serve the chicken mixture over cooked white rice.
